Spicy Tuna, Corn and Spring Onion Fritters

Crispy, savoury tuna fritters packed with sweetcorn and spring onions, lifted with chilli crisp and MSG. Quick to make, deeply moreish and equally good as a light meal or straight-from-the-pan snack.

Ingredients

425 g tuna in oil, lightly drained and oil reserved
1 tin corn kernels, drained
2–3 spring onions, finely sliced
1 egg
½ cup plain flour
2 tbsp cornflour
1½ tsp chilli crisp
½ tsp MSG
¼ tsp salt
Freshly ground black pepper

To serve
Mayonnaise or Kewpie mayonnaise
Lemon wedges or a splash of vinegar

Gluten-free option: use gluten-free plain flour.

Method

  1. Flake the tuna into chunky pieces in a large bowl.

  2. Add the corn, spring onions, egg, reserved tuna oil, chilli crisp, MSG, salt and a generous grind of black pepper. Stir gently to combine.

  3. Add the flour and cornflour and mix just until combined. The batter should be thick and scoopable.

  4. Rest the batter for 5 minutes to help it bind.

  5. Heat a frying pan over medium heat with a shallow layer of oil.

  6. Spoon heaped tablespoons of batter into the pan and gently flatten.

  7. Fry for 3–4 minutes per side until crisp, golden and cooked through.

  8. Drain briefly on paper towel and serve hot.

Alternative method

Air fryer:
Preheat to 190°C fan. Lightly oil the basket or line with baking paper. Scoop and flatten the fritters, then air fry for 8 minutes. Flip and cook for a further 5–6 minutes until deeply golden and crisp.
