A full-flavoured red wine marinade suitable for beef or lamb, with tomato, balsamic vinegar and aromatics. Well suited to grilling or roasting.

Ingredients
300 ml red wine
100 ml olive oil
2–3 fresh bay leaves
Fresh parsley
Garlic, to taste
150 ml tomato sauce
15 ml Worcestershire sauce
15 ml chutney
15 ml brown sugar
25 ml balsamic vinegar

Gluten-free option: use gluten-free Worcestershire sauce.

Method

  1. Combine all ingredients in a bowl or jug.

  2. Mix well until the sugar has dissolved.

  3. Pour over meat, ensuring it is well coated.

  4. Cover and marinate in the fridge for at least 4 hours, preferably overnight.

Serve with

  • Grilled or roasted meats

  • Potatoes or bread to soak up the juices
