Ingredients
3 eggs
45 ml brandy (lemon juice also works)
500 ml milk
Pinch of salt
225 g plain flour
1 tsp baking powder
45 g butter, melted

Method

  1. Whisk the eggs and brandy together until well combined.

  2. Sift the flour, baking powder and salt into a bowl.

  3. Gradually add the dry ingredients to the eggs, alternating with the milk, whisking until smooth and lump-free.

  4. Stir in the melted butter.

  5. Heat a lightly greased frying pan over medium heat.

  6. Pour in ladles of batter and cook until bubbles form on the surface, then flip and cook until golden.

  7. Continue until all batter is used.

Freezer: Yes, up to 2 months

Serve with

  • Cinnamon sugar and lemon
