Ingredients

6 hot cross buns

30 g butter, softened

2 eggs

250 ml milk

250 ml cream

½ tsp ground cinnamon

55 g caster sugar (¼ cup)

1 tsp vanilla extract

Icing sugar, for dusting
Method

Heat the oven to 180°C fan. Grease a baking dish generously with butter.

Slice the hot cross buns into 1 cm thick slices and spread each slice with butter.

Arrange the slices snugly in the prepared dish.

In a bowl, whisk together the eggs, milk, cream, cinnamon, caster sugar and vanilla.

Pour the custard mixture evenly over the buns.

Leave to stand for 10 minutes to allow the buns to soak up the custard.

Bake for 35 minutes, or until golden on top and just set in the centre.

Dust lightly with icing sugar and serve warm.
