A robust, savoury marinade for chicken made with dark vinegar, tomato and spices. Ideal for braai, oven roasting or slow cooking.

Ingredients
1 cup dark vinegar
1 cup tomato sauce
½ tsp paprika
Handful coarse salt
1 small tin tomato paste
2 tbsp sugar
½ cup oil
2 tbsp Worcestershire sauce
½ tsp dry mustard
1 tsp garlic
¾ tsp chutney
1 large onion, grated
Black pepper, to taste

Gluten-free option: use gluten-free Worcestershire sauce.

Method

  1. Combine all ingredients in a bowl.

  2. Mix thoroughly until smooth and evenly combined.

  3. Pour over chicken pieces and massage well into the meat.

  4. Cover and marinate in the fridge for at least 6 hours, preferably overnight.

Serve with

  • Braaied or roasted chicken

  • Rice or potato salad
