Sweet & sour pork - stew version

 My mom had a recipe like this from when she made it for a church bazaar or something, and we all loved it but she lost the recipe. I found another version in my mom-in-law's recipe stash and the result is exactly as I remember, so it's probably a very close copy.

Ingredients:

750 g pork fillet or blocks

1 onion

1 tin pineapple

1 t salt

1/4 c vinegar

1 large green pepper

1 T oil

2 T brown sugar

4 T tomato sauce

1/2 c water

1 T soy sauce

2 T maizena

Fry meat and then onion in oil. Mix pineapple juice and rest of ingredients (except veggies and fruit), add to the pork mixture and cook until thickened. Place in oven dish, add the pineapple and capsicum, and bake 40 minutes at 160 degrees until soft.
