Sweet potato sloppy joes

 This was a Daily Dish recipe from when we ordered the low carb packs in South Africa; their website seems to have disappeared so I've copied it down  here.

Ingredients:

4 sweet potatoes

600 g beef mince

1 onion (peel & chop finely)

1 green pepper (peel & chop finely)

2 stalks celery (chop finely)

2 cloves garlic (peel, chop & crush with knife)

1 T chilli powder (reduce if necessary)

1 t cumin

2 T honey

4 tomatoes or 1 tin chopped and peeled tomatoes

2 T tomato paste

80 g mature cheddar

Preheat oven to 200 degrees. Cut sweet potatoes into quarters length-wise. Place on baking sheet, drizzle with olive oil and salt & pepper and bake 35 minutes or until soft.

If using fresh tomatoes, place in bowl and cover with boiling water. Leave to stand for a few minutes, peel and chop.

Fry veggies in olive oil (5 minutes). Add mince and brown. Add everything else except cheese and mix well. Simmer 15 minutes or more until cooked.

Serve meat over sweet potatoes. Top with cheese.
