Star pudding



Another one from the family history - this was Hanno's grandma Sauerman's recipe.

Ingredients:

Batter:

60 ml butter

2 eggs

250 ml apricot jam

10 ml lemon juice

1 cup flour

1 t salt

1.5 t baking soda

1 c milk

Syrup:

2 c cream

2 c sugar

2 eggs, beaten

Sauce:

1 c sugar

1 T butter

1 l milk

1 T custard powder

Method:

Batter

Beat butter and eggs. Add jam and juice. Sift flour and salt and add. Mix baking soda with milk and add to the mixture.

Bake until done (160 degrees). Add syrup (below) when it comes out of the oven, return to oven and bake until syrup thickens. Serve with caramel sauce.

Syrup

Mix everything together.

Caramel sauce

Heat sugar and butter until light brown. Remove from heat and add a little bit of milk. Return to heat, keep stirring and gradually add rest of the milk. Keep stirring until it boils, then add custard powder.
