Slow-roast chicken pieces with chilli jam



An amazing dish that is easy to make and absolutely delicious.

Ingredients:

Chicken thighs (could add drumsticks) - 2 per person

Whole head of garlic, unpeeled

1 lemon

Handful of basil leaves

Chilli jam or chilli chutney

olive oil

salt & pepper

white wine (cheap!)

Method:

Spread dollops of chilli jam under the skin of each piece of chicken, season and place in backing tray. Bash the cloves of garlic to split the skin, and scatter them in the tray with the chicken pieces. Squeeze over some lemon juice (not too much or it can be overwhelming) and add the lemon halves into the tray too. Drizzle with olive oil and shake it so everything is marinated.

Roast at 150 degrees for 1-1.5 hours.

Remove, add the cup of wine, tear up the basil leaves and scatter over the chicken. Roast for another 20 minutes until the wine is bubbling.

Serve with couscous and lettuce, or with penne tossed in pesto.
