Potato salad with yoghurt dressing
A recipe from Adri-Louise, my mom's best friend who has since passed away. As with everything she cooked, it is fresh and flavourful and a slightly healthier alternative to an old favourite.
Ingredients:
700g baby potatoes, boiled (doesn't have to be peeled)
250 g bacon, chopped and fried until crisp
1 cup sour cream, plain yoghurt or a mixture
30 ml olive oil
30 ml vinegar (white balsamic) or lemon juice
200 g rocket or watercress
Salt & pepper
Mix the dressing ingredients. Mix chopped potatoes with greens and bacon, and pour over dressing.
