Potato and broccoli bake
A light meal or heavy side dish - the broccoli adds a slightly healthier twist on the typical potato bake. No flour so it's gluten free.
Ingredients:
250 g bacon, fried and crumbled
2 cups cooked potato, cut into cubes
300 g broccoli, cooked and chopped
1/3 cup chopped spring onion
2 T chopped green pepper
1 c grated cheese
1 t dried parsley
1/2 t dried rosemary
pinch or paprika, salt, pepper
4 eggs, whisked
1.5 cups milk
1/2 cup cream cheese
Mix eggs, milk and cream cheese. Mix everything else, place in 25cm square oven dish. Pour egg mixture oven. Bake for 30-35 minutes in 180 degree oven, switch oven off and leave in oven for another 20 minutes until totally set. Serve with salad.
