Mushroom courgettes
A recipe from my mother-in-law's stash of recipe books. I honestly don't remember making it, but I made a note in my copied-down one that it was delicious, and should stand for 5 minutes before serving.
Ingredients:
8-10 courgettes
1 small onion
180 g mushrooms
1 T butter
500 ml cheese sauce
1 egg
salt & pepper
paprika
Cut courgettes into 1cm slices and place in casserole. Fry onions in butter until soft. Add mushrooms and fry 5 minutes more. Add to courgettes in casserole dish and season with salt and pepper.
Whisk egg and add to cheese sauce. Pour over veggies, sprinkle with paprika and bake for 45 minutes at 180 degrees.
