Moist chocolate cupcakes
This is a variation on my basic cupcake recipe. I don't recall if I've ever made it but it sounds like a really good one to try! Makes 24.
1 c boiling water
3/4 c cocoa powder, sifted
1/2 c milk
1 t vanilla
2 c flour
1/2 T baking soda
1/2 t salt
1 c butter (room temperature)
250 g soft brown sugar
3/4 c sugar
4 eggs
Mix boiling water and cocoa and stir until smooth. Add milk and vanilla.
Sift milk, baking soda and salt separately.
Beat butter and white and brown sugar until light and thick. Add eggs one by one and mix well after each addition. Take turns adding liquid and dry mixes, starting and ending with dry ingredients.
Bake for 20 minutes at 180 degrees or until cooked and risen.
Top with chocolate ganache mixture of melted milk chocolate and sour cream (equal amounts) with a splash of vanilla - allow to cool until spreadable, and decorate cupcakes before it gets too thick.
