Marinade for ostrich
This is an amazing recipe to marinade ostrich fillets for the braai - such a pity ostrich is impossible to come by in Australia! We tried it on kangaroo and decided it's not worth it, we don't like the taste of kangaroo.
Mix all together, marinade for a couple of hours and you're ready.
300 ml red wine
100 ml olive oil
2-3 fresh bay leaves
Parsley
Garlic
150 ml tomato sauce
15 ml worcestershire sauce
15 ml chutney
15 ml brown sugar
25 ml balsamic
