Käsespätzle
Cheese spätzle - we first had this in the home of our friend Helena whose husband was German. Delicious enough to motivate us to invest in the right tools to make it!
Spätzle:
375 grams flour, 2 eggs, salt, 1 cup water
Prepare the dough by mixing the flour, eggs and salt together. Add the water a bit at a time until the dough is smooth but not stiff. Continue to beat the dough until it rises.
Cook in a large pot of salt water. Fill the grater with part of the dough and grate the noodles into boiling water. Use a ladle to lift up the noodles when they float to the top and keep warm.
To make the käsespätzle: Layer cooked noodles with layers of fried onion and layers of mixed mozzarella / cheddar cheese. Keep warm in the oven to allow the cheese to start to melt.
