Green bean salad (Ottolenghi)
Ingredients:
500 g green beans
1-2 red capsicum
2 t + 3 T olive oil
3 garlic cloves (sliced)
3 T capers
1 t cumin seeds
2 t coriander seed
Sliced spring onions
1/2 cup chopped parsley
1/4 cup chopped coriander
1/4 cup chopped dill
2 t lemon zest (1-2 lemons)
Cook green beans for 3 minutes; drain and rinse under cold water. Pat dry.
Blister capsicums in 2 t oil over high heat until charred. Add to beans and allow to cool.
Dressing:
Cook garlic in 3 T oil for 30 sec. Add capers and cook for 15 sec more. Add seeds and cook until garlic is golden. Pour immediately over beans.
Add mixed chopped herbs and serve at room temperature.
