Crunchies



A recipe I pulled off Facebook in the early days of the pandemic lockdown - I have a note in my recipe file that we made this in April 2020 and it was delicious.

1/2 c butter

50 ml honey

75 ml milk

5 ml baking soda

1/2 c sugar

Melt butter, milk and honey together, do not allow to boil.

Add baking soda - it will foam.

Add sugar and allow to cool a little.

Mix together 2 cups oats and 1.5 cups dessicated coconut. Sift a mixture of 1/2 c flour, 5 ml cinnamon and a pinch of salt over the oats and coconut. Mix the milk mixture into this.

Press down into a baking tray lined with baking paper. 

Bake at 180 degrees for 20 minutes; remove from the oven and cut into squares and then return to the oven for another 10 minutes to finish baking.
