Coffee custard cups
Another recipe that I made only once. Mom-in-law and I tried this one over Christmas and made some edits to the recipe to make it a bit more festive; we served it in wine glasses if memory serves. It's a coffee-flavoured custardy mousse, and the addition of kahlua makes it a bit more festive.
Enough for 6 wine glasses.
2 eggs
1 c sugar
1 c cream, whipped
2 c strong coffee
3 T maizena / cornflour
Splash of kahlua
Mix the sugar and cornflour. Add 1.5 cups of cold coffee and mix. Heat the rest of the coffee and mix in slowly, then heat the whole mixture slowly while stirring. Add beaten egg yolk and simmer for 5 minutes until cooked through and thick.
Allow to cool a little and then add whipped cream, followed by stiff beaten egg whites, and then kahlua. Spoon into wine glasses and chill.
Top with more whipped cream and chocolate shavings, if desired, before serving.
