Bran muffins
My mom made these regularly when I was growing up and I still absolutely love it.
6 cups wheat bran (I have used oat bran in the past but it changes the texture)
500 ml boiling water
1 cup butter, melted
3 cups sugar
4 eggs
1 litre buttermilk
25 ml baking soda
2.5 cups flour
2.5 cups wholewheat flour
10 ml salt
Raisins to taste
Mix bran and boiling water. Add butter and allow to cool slightly. Add sugar, eggs and 3 cups of buttermilk and mix well. Mix the baking sode into the rest of the buttermilk and add to the bran mixture. Mix flour, salt and raisings and add to the mixture.
Spoon into muffin pans and bake 20 minutes at 220 degrees C.
Variations: Replace raisins with coconut, chopped apple, dates or dried fruits.
