Basic cupcakes



My standard cupcake recipe for many years now - I've also made it into a sheet cake. Some variations available too, I'll write those up separately. 

3/4 cup butter

1 c castor sugar

3 eggs

1/2 t vanilla

2 c flour

1 T baking powder

pinch of salt

1/3 c water

1/3 c milk

Cream the butter and sugar until thick and white, add the eggs one by one. Add vanilla.

Mix the dry ingredients, and separately mix the milk and water.

Take turns adding dry and liquid mixes into the egg mix. Start and end with dry ingredients. Mix well.

Bake for 20 minutes until golden brown in 180 degrees oven.

For a simple chocolate variation, reduce the flour by 1/3 cup and add 1/3 cup cocoa instead.
