Baked potato, onion and feta dish

 A filling potato dish which can be a side or a main.

Ingredients:

2 T oil

2 red onions, sliced

3 large potatoes

100 g feta cheese, crumbled

1 T fresh rosemary, chopped (2 t if using dried)

2 large eggs

1/2 cup ideal milk

Fry the onions in oil. Boil the potatoes until just soft, peel and cut into slices. Place in oven dish with the friend onions. Mix the rest of the ingredients together and pour over.

Bake at 160 degrees for 20 minutes or until golden and cooked through.

Variation: Add crispy bacon or salami, or replace feta with a different cheese.
