Baked lemon pudding
I made this only once, as far as I can remember - at mom-in-law's house over a Christmas. I made a note that it's delicious though, so should probably try it again.
3 T butter
0.5 cup plus 2 T sugar
Juice and rind of 1 lemon
1 c milk
2 T flour
2 eggs
Beat the butter and sugar until creamy and thick. Add the egg yolks and mix well. Add all the other ingredients except egg whites and mix.
Beat egg whites until stiff and fold into mixture. Pour into a greased dish, place in a tray half filled with water and bake 45 minutes at 180 degrees.
Serve with vanilla ice cream.
