Baked apple pie (Pretorius family recipe)




A typical South African recipe - with many, many variations. This is the one my mom used to make; it is richer than the one my husband grew up with but delicious.

3 T butter
1 c castor sugar
3 eggs
pinch of salt
1 tin (400 g) of apples
1 c flour
1 t baking powder
1/4 c milk

Mix butter and sugar until thick and light. Add eggs one by one, then dry ingredients and then milk. Pour into a greased oven dish and place apples on top. Bake for 40 minutes at 180 degrees. When it comes out of the oven, immediately pour over warm sauce consisting of:

125 g butter
1 c sugar (can reduce, it's very sweet)
1 c milk
Juice of 2 lemons (add this once the sauce is already boiling to avoid curdling the milk)
