Bacon and butternut soup
I got this recipe from my sister after she made it for us - delicious, quick, and very comforting.
Ingredients:
1 T olive oil
400 g bacon
2 carrots, peeled and cut into chunks
1 onion, chopped
1 large butternut pumpkin, peeled and cut into cubes
750 ml chicken or vegetable stock
Fry the onion and 250g bacon in oil. Add the vegetables and stock and cook until soft. Puree.
Fry the remaining bacon (chopped into small pieces) until it is crisp and serve as "croutons".
