Mint crisp tart
I'm going through my recipe folder with hand-written recipes from my mom and mother-in-law's recipe books, and I have more than one copy of this recipe. Another real 80s number, although it was a dessert option in the restaurant where we had lunch today.
Ingredients:
Tennis biscuits (about 3/4 packet)
1 tin caramel (dulce de leche)
250 ml cream
100 g mint chocolate
Extra mint chocolate for garnish
Grate the mint chocolate and whip the cream until stiff peaks. Mix with the caramel.
Line the bottom of a 1.25l oven dish with tennis biscuits. Cover in half of the caramel mixture, then repeat both layers. Chill in the fridge for 2-3 hours and then garnish with more grated chocolate. Add extra whipped cream on top if desired.
