Hot milk cookies
A very versatile cookie recipe - perfect for holidays. I've flavoured this with orange or coffee flavouring, topped it with royal icing or sprinkles, but the plain vanilla version is excellent before making any adjustments.
Ingredients:
6 cups all-purpose flour
1/2 t salt
500 g butter
2 c sugar
1/2 c milk
10 ml bicarb of soda
flavouring (vanilla, lemon or other)
Method:
Sift the flour and salt. Rub in the butter in a food processor until well mixed.
Heat the sugar, milk and bicarb over low heat in a large pot, stir occasionally. Once it boils it will expand rapidly so watch it carefully.
Mix the warm milk mixture and the flour mixture. Place in a sealed container and let cool; overnight in the fridge is perfect.
Heat the oven to 200 degrees C. Grease a baking sheet (or two).
Roll out the cookies on a floured surfact and press out shapes as preferred. Bake for 10-12 minutes at a time until golden; allow to cool slightly and then transfer to a cooling rack.
