Date balls
A very quick recipe for date balls covered in coconut.
Ingredients:
250 grams dates
2 large eggs (beaten)
1/2 t vanilla
200 ml sugar
3 1/2 cups rice crispies
1 cup crushed nuts
Coconut
Heat together the dates, eggs, vanilla and sugar until the dates lose their consistency and becomes a sticky paste. Mix the cereal and nuts into the paste and roll into balls, covering each ball in coconut.
Wet your hands before rolling the balls to make it easier. As for choice of nuts, I have used almonds, cashews and peanuts before, all of those work well.
