Custard tart
I used to beg my mom to make this fridge tart - it is really easy and quick and absolutely delicious. It's a real 80s recipe, using custard powder and condensed milk - I keep threatening to try making this using a real custard made from scratch, but why mess with a great recipe?
Ingredients:
1 packet of tennis biscuits
1 litre milk
2 T butter
1/2 c custard powder
1/4 c sugar
1 t vanilla
1 tin condensed milk
1/2 c lemon juice
Place biscuits in the bottom of a glass oven dish as base.
Make custard using the milk, butter, custard powder, vanilla and sugar: Mix the powder and sugar with a little bit of milk to make a thin liquid. Heat the rest of the milk until boiling, then quickly whisk in the custard powder mixture and keep stirring until it thickens. Once it thickens, remove from heat and mix in the vanilla and butter. Allow to cool.
Separately, mix the condensed milk and lemon juice.
Assemble by pouring half the slightly cooled custard over the biscuit base, follow with all of the condensed milk and then the rest of the custard. Cool overnight in the fridge before serving. a
